Ingredients

Dough:

  • 3 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 packet 2¼ tsp active dry yeast
  • 1 tsp salt
  • 1 cup warm plant-based milk about 110°F/43°C
  • ¼ cup honey
  • ¼ cup dairy-free butter melted

Cinnamon Sugar Filling:

  • ½ cup dairy-free butter softened
  • 1 cup light brown sugar
  • 2 tbsp ground cinnamon

Honey Glaze:

  • 1 cup powdered sugar
  • 2 tbsp honey
  • 2-3 tbsp plant-based milk

Instructions

Prepare the Dough:

  • In a small bowl, combine the warm plant-based milk, granulated sugar, and yeast. Let it sit for about 5 minutes until foamy.
  • In a large bowl, mix the flour and salt.
  • Add the yeast mixture, honey, and melted dairy-free butter to the dry ingredients, mixing until a dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Cinnamon Sugar Filling:

  • In a bowl, mix the softened dairy-free butter, light brown sugar, and ground cinnamon until combined.

Assemble the Cake:

  • Preheat your oven to 350°F (175°C).
  • Roll the dough out on a floured surface into a large rectangle.
  • Spread the cinnamon sugar filling evenly over the dough.
  • Cut the dough into long strips and roll the first strip into a tight spiral. Continue wrapping the other strips around this spiral to form a large coil.
  • Place the coil in a greased 9-inch round cake pan.
  • Cover and let the dough rise again for about 30 minutes.

Bake the Cake:

  • Bake the cake for 30-35 minutes, or until golden brown.

Prepare the Honey Glaze:

  • In a bowl, mix the powdered sugar, honey, and plant-based milk until smooth.

Glaze the Cake:

  • Once the cake is done, pour the honey glaze over the warm cake, allowing it to drip down the sides.

Serve:

  • Let the cake cool slightly before slicing and serving.
  • Enjoy this delicious and gooey Giant Honey Bun Cake!

Notes

  • Yeast Activation: Make sure your milk is warm (not hot) to properly activate the yeast.
  • Dough Rising: The dough should rise in a warm place. If your kitchen is cool, consider placing it in an oven with the light on.
  • Serving: This cake is best enjoyed warm to savor the gooey texture.
  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days.
