Preheat your oven to 350°F (180°C) and line a 6-inch square baking pan with parchment paper. Lightly grease it.
In a saucepan over low heat, melt the butter and sugars together. Add the milk and stir until combined. Turn off the heat and add the dark chocolate, stirring until it melts and the mixture is smooth. Let it cool.
Sift the flour and cocoa powder into a large bowl.
Pour the wet ingredients into the dry ingredients and mix until everything is just combined.
Pour the batter into the prepared pan and bake for about 20 minutes, or until the top is set.
While the brownies cool, prepare the filling. In a frying pan, heat the butter and then add the shredded filo. Fry until golden and crispy. Transfer to a bowl and let it cool for 15 minutes. Then, mix in the pistachio butter until well combined.
Press the pistachio filling evenly over the cooled brownie base.
To make the ganache, heat the cream until it’s just about to boil. Remove from heat and add the dark chocolate. Let it sit for a few minutes, then stir until smooth. Pour the ganache over the pistachio layer.
Drizzle the melted white chocolate over the ganache, then refrigerate the brownies until they are fully set.
